Culinary Powerhouse Resort on the Shores of Fernandina Beach Unveils This Year’s Most Buzzed About Ingredients to be Featured in its Beloved Dinner Series

AMELIA ISLAND, Fla., February 8, 2024 – Since 2014, Omni Amelia Island Resort has been creating a unique array of themes for its annual Sprouting Project dinner series, and now they are pleased to share this year’s lineup full of delectable flavors. The annual monthly culinary event where attendees are invited on an epicurean adventure exploring the resort’s onsite chef’s garden and Barrel Room topped off with an elevated five-course dinner under the stars. The dinners offer an intimate southern-inspired farm-to-table experience which is the resort culinary team’s answer to hyper-local sustainable dining, all tied together by the challenge of creating an entire meal featuring one key ingredient.

“When thinking about which themes we wanted to experiment with this season, we knew we wanted to bring back flavors that are beloved such as truffle and citrus,” said Executive Chef Omar Collazo. “But we also wanted to bring in new flavors that are trending and will be big this year such as mushroom and chili pepper. We can’t wait to bring back this sustainable culinary experience to visitors and locals alike here on Amelia Island.”

At the forefront of Amelia Island’s culinary scene, it was crucial to understand the future of gastronomy in 2024 and beyond to develop flavors that excite and entice guests. With mushrooms predicted to grow in popularity and become a substitute for meat this year, the resort team wanted to experiment and create a fresh menu with fungi. Additionally, complex heat is forecasted to emerge this year as a major trend as people look to find the perfect heat in meals.

Guests can also learn more about the resort’s sustainable growing practices via a tour of the state-of-the-art aquaponic greenhouse, expansive organic gardens, Barrel Room, chicken coop and large collection of beehives which are used to harvest honey and increase pollination throughout the garden.

The Sprouting Project dinners’ schedule and themes for this year include:

·         March 16, 2024: Egg

·         April 20, 2024: Citrus

·         May 18, 2024: Mushroom

·         June 15, 2024: Tree Nut

·         July 20, 2024: Chili Pepper

·         August 17, 2024: Melon

·         September 14, 2024: Tuber

·         October 19, 2024: Squash

·         November 23, 2024: Pear

·         December 13, 2024: Truffle

·         December 14, 2024: Truffle

·         December 15, 2024: Truffle

Tickets for general admission to each dinner are $109 per person, while the special Truffle dinners held in December 2024 will be $249 per person. Each dinner will kick off with cocktails and light bites at 6 p.m. followed by a five-course dinner at 6:30 p.m. A cash bar will be on site and seating is limited. New this year, those looking to stay overnight and experience a Sprouting Project Dinner, can book an overnight package which includes tickets to that month’s dinner as well as a welcome amenity.

Private dinners are also available for up to 10 people, starting from $350 per person without beverage pairings, and $475 per person with beverage pairings. The Sprouting Project consists of a state-of-the-art aquaponic greenhouse, an expansive organic garden, a large collection of beehives, chicken coop and a barrel room. The Sprouting Project also provides ingredients to the resort’s nine restaurants and lounges including Florida palmetto honey dripping from the comb and organic Satsuma jam at The Morning Table breakfast buffet in Sunrise Café and fresh basil for pesto at Natural Slice.

The Sprouting Project’s Barrel Room provides an opportunity to age honey varietals, vinegars, hot sauce and cocktails.
